As Navratri is here, I have started preparing for the same. Like always, this time also I am going to try some innovative fasting dishes. One of them is Lauki ki Barfi. Lauki or bottle gourd is not very much loved vegetable but I bet you can’t resist from having the second piece of lauki ki barfi.
Made with only two main ingredients, milk and lauki or ghiya or dudhi, tastes awesome. Yes making it tastes a bit longer time but it is worth the time spent. Same is the recipe of dudhi halwa, just skip the freezing part of the method. And you can enjoy hot or warm dudhi halwa.
Grated lauki is simmered in a pan full of milk, milk is cooked over time. As milk reduces, and it takes the form of halwa makes it easy to freeze in refrigerator.
Below is your recipe of dudhi barfi or lauki barfi. Enjoy it while fasting or anytime. I am sure your friends and family u will love this.

- Lauki / Bottle Gourd - 2
- Milk - 1 ½ ltr (preferably full cream)
- Sugar - 1 cup or to taste.
- Cardamom powder / Elaichi Powder - ½ tsp
- Almonds - 2 tbsp, chopped
- Ghee or oil - for greasing
- Grate lauki using a hand grater and transfer it to a bowl full of water. This is done so that lauki does not turn black.
- In a pan, heat milk. Squeeze grated lauki and transfer it to the pan.
- Mix well and cook it on high flame till the milk boils. After one boil lower the flame. Stir occasionally.
- Keep on stirring as the reducing of milk will take time.
- Once you feel like the mixture is semi solid, add sugar and cardamom powder. Stir.
- After adding sugar, the mixture will again become watery. Keep on stirring.
- Towards the completion of halwa, add chopped almonds. Remove from gas. Keep it aside to cool down to room temperature.
- Now grease the aluminum barfi tray with ghee.
- Set the prepared dudhi halwa in barfi tray.
- Refrigerate it for 1 or 2 hours.
- After barfi solidify, cut into desired shape using a sharp knife.
- Lauki ki barfi is ready. Keep it refrigerated in an air tight container for longer shelf life.
• Better use full fat milk then the toned one.
• You can use nuts of your choice. I have used only almonds.
• While buying ghila for barfi, get the green one as it be give more green color to barfi.

7. Towards the completion of halwa, add chopped almonds. Remove from gas. Keep it aside to cool down to room temperature.
8. Now grease the aluminum barfi tray with ghee.
9. Set the prepared dudhi halwa in barfi tray
10. After setting it will look like this. Refrigerate it for 1 or 2 hours.
11. After barfi solidify, cut into desired shape using a sharp knife.
13. Lauki ki barfi / dudhi barfi is all set to gorge on. Enjoy 🙂
