If you are looking for some simple and easy dinner ideas, then you can try potato carrot dry mix in dinner. This gajar aloo ki sabji goes well with hot chapatis and can be served as side dish with rice.
This recipe even taste good when served with bread and the toasts made of this dish is very yummy.
You can also add fresh peas if you with too, but I didn’t use it here to keep it simple. 🙂
- Cumin seeds
- Ginger,
- garlic and
- green chillis.
- chopped onion.
- chopped tomatoes.
- coriander powder,
- turmeric powder
- a pinch of asafoetida.
- Chopped carrots
- potatoes.
- Salt to taste.
- garam masala
- and finely chopped fresh coriander leaves.
- Oil - 1 tbsp
- In a pan, heat oil and add cumin seeds to splutter.
- To the pan, add finely chopped ginger, garlic and green chillis. Cook on medium flame for 2 - 3 minutes
- Add chopped onion.
- When onion turn light brown and translucnet, add chopped tomatoes. Fry till they turn soft and mushy.
- Add spices. Add coriander powder, turmeric powder and a pinch of asafoetida.
- Add 1 tbsp water and mix well. Cook for few seconds.
- Add Chopped carrots and potatoes. Add Salt to taste. Mix Well.
- Cover the pan with lid and cook till potatoes and carrots turn soft.
- Add garam masala and finely chopped fresh coriander leaves.
- Serve hot with roti, naan or as a side dish with rice.
